Chocolate Orange Biscotti

Oh my goodness, it’s almost Christmas.  I am not as prepared as I’d like to be, because Mother Nature decided this is as good a time as any to send the Mother of All Life Changes and give me the gift of, a somewhat early, menopause!   (As if dealing with a spinal nerve cyst and surgery wasn’t enough in one year!)

I think the Universe gives me more credit than I deserve, by thinking I can handle so many changes at once.  Oh well, it is what it is and life is too precious to whine and complain (not that I haven’t), so now you know why I’ve been absent for so long, and I thank those of you who have missed me and expressed it in email or by phone.

I haven’t been doing a whole lot of cooking or baking.  My husband has been forced to learn to cook, and I must say, he is doing quite well.  As a matter of fact, I’m feeling a bit threatened by his ability to make spaghetti sauce that tastes so much like mine.  It’s a good thing I didn’t tell him how to make the cassata.   That cassata recipe is going with me to my grave.  ;)

Life is a mystery, kind of like the box of chocolate Forrest Gump talked about.   It’s also like trying a new recipe.   Sometimes you get a prize winning dish, sometimes it’s mediocre, and other times it’s an absolute disaster.  That pretty much sums up my year.  The thing to remember, is when you get the disaster,  you must never forget that a prize day is sure to follow.  It always does.  Always.

Speaking of a prize–I found an amazing recipe for biscotti, on Epicurious.com.  I made a few changes, and now I have the best biscotti I’ve ever made in my life!  I want to share the recipe, and the changes I made, with all of you.

 

Chocolate-Orange Biscotti RECIPE

The following are my ingredient changes:

I added 2 Tbsp coarsely grated orange zest, instead of 1 Tbsp

3 Tbsp Orange Contreau- instead of 2 Tbsp Orange Liqueur

1/2 tsp orange extract

6 ounces Chocolate Chunks (60%), instead of bittersweet chocolate

Angelnina’s NOTES:

I do not like my biscotti rock hard. I baked the first baking for 20-25 minutes and the second baking about 15 minutes.  My family prefers them lightly toasted on the outside, but still tender.

Bon Appetit hit the jackpot with this recipe!

The flavors of this cookie take me back to when I was a child, visiting my Italian grandparents in upstate New York.  Orange and chocolate in a cookie, is like a bit of heaven, or nirvana, or whatever blissful place you wish to visit!

Love and Marriage and Cupcakes

I’ve  had a busy winter!

My son, Sean, and his fiancee Olivia,  married on December 17th.  Sean’s father and I couldn’t be happier!

It was a small ceremony downtown Seattle.  After the ceremony, the family gathered for a formal dinner at Pomodoro’s, and then we partied at Magnolia’s Mulleady’s where the newlyweds held their reception.

I volunteered to make the cupcake tower for the reception.  I had a few weeks notice and went crazy trying to figure out how to put this idea together.   The couple requested the “Day of the Dead”  pair be the cake topper–needless to say, it is was a unique idea, and I have to say, I really liked the idea of thumbing our noses at tradition.

I made close to 100 cupcakes.  I also piped 80 butter cream roses for the tops of the chocolate cupcakes.

I cheated and used a mix for the chocolate, but I added buttermilk and changed a few things around to make them my own.  The ivory butter cream is homemade.  I used an edible pixie dust to make them glitter under the lights.

I also baked lemon cupcakes–from scratch this time!– and a batch of Hummingbird cupcakes with cream cheese frosting.  The mini-cake topper is also a Hummingbird Cake.

I used putty to hold the giant pink martini glasses in place with the layers of depression glass and crystal in between.

Olivia and my mother made molded chocolates and placed them in little cellophane bags with ribbon and a photo of the bride and groom, to give out for wedding favors.  We hung them from a little Christmas tree.  So adorable.

The night flew by and soon the newlyweds flew off to California to enjoy a honeymoon in the sun.

The Day I spotted Curtis Stone “Take Home Chef”

Hi everybody!  This post is a re-post from my old Live Journal blog.  This happened in November of 2006.  I thought I’d share my adventure with you.  I have severeal food blogs to get up and posted.  The holidays and my son’s wedding kept me pretty busy in December.  Hope you are all well. On with the story:

Yesterday I drove into downtown Edmonds for my dreaded monthly eyebrow waxing.   I also had my brows tinted–which is something I’ve never done before.   I left feeling very self conscious about my too dark brows, but life goes on so I persevered.

Afterward, I met my friend, “E”  for lunch.  We had a wonderful meal at Provinces–yummy Chinese food.

After lunch we drove to the ferry park on the waterfront.   E and I are taking a beginner’s knitting course together and she had missed a class, so I was going to show her what I had learned.   We decided to walk to the little coffee shop next door and grab a mocha to drink while we knitted. I   was teasing E about drinking coffee–I don’t think I’ve ever seen her order coffee in the 14 years I’ve known her.   I was joking that she was going to be too wired to cast on the yarn.  I  reminded her we were going to have a pasta making day at my house, when I looked out the window and saw what appeared to be a man and woman in heavy makeup–followed by a crew of camera men and giant microphones.

“Hey, what’s with the camera crew following those people?   They must be actors or models….HOLY SHIT  it’s the Take Home Chef guy!”

Yes, my friends, I may be the only person in my town who recognized the famous chef, well, me, E, and the barista!   We all immediately ran out of the shop and stood there staring across the street.   E realized they were heading toward the ferry park, but I was so star struck, I was standing there with my mouth hanging open, and repeating “Oh my God, Oh my God!”

An elderly couple was sitting in front of the shop on a bench. The woman asked me who he was, and I told her he is a famous chef.   Her husband said, “He looks too young to be a chef, looks more like a race car driver”

I always thought star struck groupies were beneath me.   I was one of the people who asked why people scream and get excited over another human being.

I was still staring, when I heard  a voice asking,

“Where’s your camera?” “Anita, where’s your camera?”

At this point I realized it wasn’t a voice in my head, it was my girlfriend E’s voice and she was shaking my arm trying to jar be out of my stupor.   E was telling me to run to the car and get the camera!   As a last ditch effort she grabbed my mocha and yelled,

Run, Anita, Run!”

Immediately I started to run, but soon I realized I was running alongside the crew and the chef.   My short little legs could only move so fast and I couldn’t make headway.   I was also in a long dress, so I was running like a penguin due to the lack of leg room to make long strides.   So there I was running like a penguin with my drastically too dark eyebrows, trying to get ahead of them to reach my damn camera before they left the park.   The crew was staring at me and a policeman on a bike was trying to peddle slow enough to keep up with me.   “What is this crazy middle aged spiked hair lady with the too black eyebrows doing?”,  he seemed to be asking himself.

Finally, the crew stopped right in front of my parked van, and I could hear the chef asking the woman if she lived on the other side (pointing to the island).   It was then I realized they were in the middle of filming an episode.   I slid open my mini-van door and fumbled for my camera, lifted it from the case,  and then immediately started snapping photos. They all looked at me–I’m sure out of concern and for the protection of the poor chef and his guest.   It was as though I lost all sense of humility and kept snapping away, I followed them all the way out of the park, snap snap snap!   And up the hill and beyond the coffee shop.   Snap snap snap!

I entered the paparazzi zone.

I finally returned to the coffee shop , it was then I noticed the pain.  I hadn’t ran very far, but I had been so tense with excitement that I pulled muscles in my back and neck.   I hobbled into the coffee shop and shared the photos with E who was very proud of herself for shaking me into consciousness and helping me score the photos.   As we strolled back to the van with our mochas in hand we had big grins on our faces–we had spotted a celebrity in our very own little town.

“They can never call our town “Dead-monds” again.   Oh no, we live in an exciting little town.”

“Yeah, and we have photos to prove it.”

“Right, we aren’t all old and boring people here.”

We climbed into my white mini- van and pulled out our pink and purple wool yarns to begin knitting, I took some Advil for my muscle pain, and we watched the ferry pull away with the handsome chef –who “looks more like a race car driver”.

Middle age happens.

“Day of the Dead” festival in Seattle (2009)

“The ”Day of the Dead” (El Día de los Muertos or All Souls’ Day) is a holiday celebrated in Mexico and by Latin Americans  living in the United States and Canada. The holiday focuses on gatherings of family and friends to pray for and remember friends and family members who have died. The celebration occurs on November 1st, and 2nd in connection with the Catholic  holiday of  All Saints Day which occurs on November 1st and All Soul’s Daywhich occurs on November 2nd. Traditions include building private altars honoring the deceased, using sugar skulls, marigolds, and the favorite foods and beverages of the departed, and visiting graves with these as gifts.” (Wikipedia)

I am in love with this celebration.  I love the colors, the music, the dancing, the makeup, the food, the costumes, the decorations, the art–the ART !

As much as I whine about longing to live on a farm in the country, I feel blessed to live so close to Seattle.  I have learned more about different cultures by attending the free festivals, than I had ever known before.

A Trip to the Country

My husband and I finally managed  to squeeze in a mini-adventure.   Fear and the recession made us think twice about spending money on vacations or mini-trips.  We decided to throw caution to the wind and give ourselves a much needed break.

We headed to Eastern Washington to spend a few nights outside of a little mountainside town– Leavenworth–Washington’s own little Bavarian village.

I love this town.  I especially love visiting in autumn, as Eastern Washington is the Apple Capital of America.

We found a little roadside stand off the beaten trails.  A farmer offers–on the honor system!–all sorts of fruits and vegetables for 50 cents a pound.  I don’t know about you, but 50 cents a pound is too difficult for me to pass up.  Mark and I filled our trunk with an assortment of apples, pears, and peppers.  We also visited a farmer’s market and bought fresh watermelon and cantaloupe.

Another year at the Italian Festival in Seattle!

There is something about a gathering of Italians–and “wanna-be ” Italians–that makes me look forward to fall in Seattle.   Mother Nature was certainly smiling down upon us–the sun was shining and the weather was perfect!

My Love for Retro, Cottage Chic, and Cookies!

The past week, I’ve been searching for dining room chair slipcovers that will fit my over sized parson chairs.   I prefer the look of a wooden chair , but my tailbone prefers the feel of a well cushioned upholstered chair.  Such is middle age.  I have failed to find slipcovers, but on my journey, I visited my favorite little shop in Bothell, Washington.   The Cranberry Cottage!

Since my last visit to the shop, the owner has parked a retro camping trailer on the grounds–to use as both a children’s play area and to display vintage items for sale.

I used to own a camping trailer very similar to this one.  Apparently, they are now all the rage for lovers of retro. Some people use them as guest houses .  Creative and fun idea.  Too bad I sold mine!

In other news….

Berry Crumble

Blackberry season, in my neighborhood, can easily turn to war.  I can’t tell you how many times I’ve caught people trespassing on my property to pick the blackberries.  Attempts to deter the berry thieves have been futile.  People will break the law for a free blackberry.  I’ve tried everything–from sneak attacks to police tape.  It simply comes down to survival of the fittest.  So far, a group of four elderly Korean women are burying me.  These ladies are out before the rooster crows!  They can clean out the entire patch of newly ripened berries in a single morning.  Before I manage to drink my morning tea, the early risers have filled their buckets and–I’m guessing–have blackberry pies in the oven.  I was lucky to score a few cups of berries to make my berry crumble.  Thankfully, I had a cup of frozen raspberries to throw into the mix!

Berry Crumble

Filling

3 cups of your favorite berries or mix of berries

1/3 c sugar

1/8 c flour

Tbsp orange juice (opt)

Toss well, and heat a little on stove

-Pour berry mixture into little ramekins– I used 5

Topping

1/2 c flour

1/4 c brown sugar

1/8 c sugar

1/8 tsp Kosher salt

Pulse a few times to combine in food processor

Add

4 Tbsp cold butter , cut up

pulse until size of peas

Pour mixture into a bowl and add 1/4 cup dry oats ( I used Old Fashioned Quaker Oats)

stir in oats.

Place a few Tablespoons of topping over the berries in the ramekins.

Sprinkle sliced almonds over the top.

You will have some topping leftover–place in fridge to use next time!

Bake these on a lined baking sheet  at 350 degrees till warm and bubbly–about 30 minutes +

Enjoy with a scoop of vanilla bean ice cream!

Chicken Predators

What a summer we’re having!  I’ve decided I need to scale back on some of my plans.  I had wanted to paint the house and out building a nice light yellow with white trim, but we may need to push that plan into next summer.  The gardens and chickens are keeping me plenty busy.

A few weeks ago, Mark and I heard a lot of commotion behind our side yard fence.  The trees are thick between the two properties, but we heard a few crows flipping a fit!   On closer observation, I discovered this little bandit in the cherry tree.

On even closer observation, I saw 4 little bandits!   Mother crow was on the branch above screaming for the life of her baby.

The bandits looked right through me.

My only fear was for the chickens.  Two older hens are allowed to roam with a simple nylon fence, and I can’t believe the raccoons haven’t attacked by now.

They sure do look sweet and innocent…

We have decided we can’t go on worrying about letting the big girls roam. Nature may take its course, but it feels cruel to keep them penned up. Two weeks later, the girls are alive and well.

Last night, the motion detector went off on the outside of the chicken coop, and we saw a possum climbing up the side looking to gain entry.  I hear tell possum eat chicken too.  Check out this very cool Youtube video.

Our large screen television blew up last night, but I think we have our own wildlife show going on in the backyard.

I’ve been absent from my blog. Summer is a busy time at Angelnina’s Cottage. We’ve had a beautiful spring and summer. Our part of the country usually doesn’t deliver all the sunshine and warm temperatures we’ve enjoyed this year.   I believe we earned it after an unusually hard winter.

A Morning Walk

I’ve been walking close to three miles a day for the past few weeks.  I have a lot of anxiety, and I’ve found walking, for at least an hour, seems to help tone it down.   I’ve suffered from anxiety, on and off, my entire life.  Recently, I noticed it was reaching a point that made me feel extremely uncomfortable. I knew I had to do something, but I didn’t know quite what to do.

I know exercise is key in calming the mind, so I mapped a walk near my home, and I set out to walk and walk and walk some more.  I’m so happy I decided to start walking down on the waterfront.  It is only a seven minute drive from my house, and the views are healing.  I thought I’d share a few shots of my late morning journey.

Brackett’s Landing is the ferry terminal for the town of Edmonds.  This park has saved my life.  I can remember bringing my son here when he was very young.  This park will always remind me of our days at the beach.

There is something magical about this place.  I like to read and write here.  Lately it seems to have gained popularity and it’s a challenge to find a parking spot.  I just park up the hill in town and make the walk longer.  It’s all good.

Just past the ferry terminal is a lovely path through yet another park.  In mid summer there are small trees here that are very fragrant.  I still don’t know what they’re called, but the fragrance stops me in my tracks.  I swear fairies live here.
