I started a new blog- Angelnina’s Photography

I’ll still be blogging here at Angelnina’s Cottage, but I’d like to make a home to track my progress on school as well.

I’m being taught by professional photographer Patricia Ridenour.  Ms Ridenour is an amazing photographer, and her passion is contagious.  I’m more than grateful to have found the perfect instructor.  She teaches us the rules, and then encourages us to break them–yes!

The first post at Angelnina’s Photography, was shot in my formal living room, using a basic work light hung at a 45 degree angle and a small diffused light box.  The first photo is in natural light.

Got Potatoes? German Potato Salad!

When I was a pre-teen, I used to dig around in the kitchen cabinets looking for something to eat.  Money was always tight, and fancy food in our house was a can of Campbell’s Vegetable Beef Soup.   If we were out of canned and packaged foods, we usually had a bag of potatoes, a box of Saltines, a loaf of white sandwich bread, eggs, and a carton of milk.  Many people would be surprised to know how many meals you can make with those five ingredients.  Throw in some cheese and bacon and you’re going to eat pretty darn well.

If you’re ever hungry for a snack, but you haven’t gone grocery shopping yet, try crumbling some saltines in a large glass and then pour milk on top of your crumbled crackers–eat it with a  spoon.  Flavorful?  No.  Healthy?  Not really.  Filling?  Mostly, yes.

One of the recipes I can remember digging out of my Mother’s only cookbook–”Better Homes and Gardens Cookbook”–is the German Potato Salad recipe.  I remember the first time I made it–I thought I had died and gone to heaven.  Simple ingredients turned into something kind of fancy!

Over the years, I’ve made the salad by following the recipe to a “T”.  I made it again last week, and thought I’d share.  If memory serves me right, as a kid, I had to substitute Spam for bacon.   I don’t recommend using Spam. :)

My good friend Liz gave me this book.

German Potato Salad

Makes 6 to 8 servings

6 medium potatoes (2 lbs)

6 slices thick bacon

1/2 cup chopped onion

2 Tbs all-purpose flour

2 Tbs sugar

1 1/2 tsp salt (less if bacon is extremely salty)

1 tsp celery seed

dash pepper

1 cup water

1/2 cup cider vinegar

2 hard cooked eggs, sliced

In a covered pan cook potatoes in boiling salted water for 25 to 30

minutes or untill tender; drain well. Peel and slice potatoes. In a

large skillet cook bacon until crisp; drain and crumble, reserving

1/4 cup drippings. Cook onion in the reserved drippings until

tender but not brown. Stir in the flour, sugar, salt, celery seed,

and pepper. Add water and vinegar. Cook and stir until thickened

and bubbly. Cook and stir 1 to 2 minutes more. Stir in bacon and

potatoes. Cook about 5 minutes or until heated through.  Add hard

cooked eggs: toss lightly to mix.

Oh how I love the scent of lavender.  It does something to me.  No, really, it does something to  me.

I want to touch it, I want to smell it, I want to cook with it, and I want to bathe in it!  I can’t tell you how much I love lavender!  It must be the Lavender Fairies, but I just have to have it in my life.

I visited Lavender Hills Farm today, and let me tell you, it is an amazing place to visit.

As I walked through the entrance, I smelled a wonderful scent, but it wasn’t lavender–what was it?  Jasmine?  Oh no, this was something I have smelled before–it was honeysuckle!  Lots and lots of  honeysuckle wrapped around the arbor entrance to the lavender fields.  Oh, the smell of honeysuckle mixed with this view?…

Intoxicating!

How long has this farm been here, and why haven’t I visited before?  Oh, forget the past, look at this place!

I’m highly allergic and I avoid cats like the plague, but remember, I was under a the spell of the wee folk :)

I especially enjoyed the blown glass garden art–gorgeous!

I left with a jar of lavender honey (from their own bee hives!), a package of culinary lavender, a white lavender plant (Yes!  Lavender can be white too!), and 3 rhododendrons–they are mystery plants, as the owner has no idea what kind they are.  I figured for $3 a bush, I’ll take my chances.  I mean, who knows what else those fairies have in store for me.  I’ll keep you posted.

In the meantime, I need to start baking something with lavender.

Maybe this Lemon Lavender Cake!

A Morning Walk

I’ve been walking close to three miles a day for the past few weeks.  I have a lot of anxiety, and I’ve found walking, for at least an hour, seems to help tone it down.   I’ve suffered from anxiety, on and off, my entire life.  Recently, I noticed it was reaching a point that made me feel extremely uncomfortable. I knew I had to do something, but I didn’t know quite what to do.

I know exercise is key in calming the mind, so I mapped a walk near my home, and I set out to walk and walk and walk some more.  I’m so happy I decided to start walking down on the waterfront.  It is only a seven minute drive from my house, and the views are healing.  I thought I’d share a few shots of my late morning journey.

Brackett’s Landing is the ferry terminal for the town of Edmonds.  This park has saved my life.  I can remember bringing my son here when he was very young.  This park will always remind me of our days at the beach.

There is something magical about this place.  I like to read and write here.  Lately it seems to have gained popularity and it’s a challenge to find a parking spot.  I just park up the hill in town and make the walk longer.  It’s all good.

DSC_2090

Just past the ferry terminal is a lovely path through yet another park.  In mid summer there are small trees here that are very fragrant.  I still don’t know what they’re called, but the fragrance stops me in my tracks.  I swear fairies live here.

Snow Geese

It snowed here in the Seattle and surrounding areas.  I’m excited, but I’m also a bit worried about my hens getting too cold.  I can hear them outside announcing their eggs as I write this.  It’s 25 degrees right now, but the lows are expected to drop into the teens again this evening.  The girls have been regularly laying daily.  Five hens, five eggs a day.  I feel blessed to have them, and I’d like them to be as comfortable as possible–without getting too warm–as we go through our blustery weather.

In other news, I have started occupational therapy (OT) for my vestibular disorder.   I got sick after the first one.  OT says it is normal.  I have two more this week.  I just want to be on land soon.   All this motion has me feeling like I’ve been out at sea on a raft for the past six weeks.

I took a drive last month and found these beautiful snow geese on the side of the road.  They are just beautiful, and the pictures do not do them justice.  The white blanket of snow geese to go on and on as far as the eye can see.

My Hipneck Mother’s Day

Mother’s Day was fun this year.  Sean called and offered to take me to dinner.  I asked if I could think about it for a few minutes.  I didn’t want to reject his gift offer, but at the same time, I realized going out to eat means I have less time to share with him.  Usually we’re all focused on menus, service, food, etc.  I wanted real time together.  I called him back and asked if he would like to come over and roast chicken dogs on the back patio.  We’ve never done anything like this before for a “formal” holiday.  I think in a moment of presence, I realized I didn’t want to be out at a fancy restaurant.  I wanted time with Sean.  To my surprise, there was no hesitation and Sean responded with, “Okay, let’s do it.”

I lit up the pot belly stove I had scored at an estate sale some years ago.  I’d never lit it before, so I wasn’t sure if it would warm us in the cloudy cool weather.  After about an hour of burning it felt like a powerful heater!   It was a great Mother’s Day.  Maybe one of my favorites in recent years.

Sean and Olivia were good sports about the entire experience.

“Let Sleeping Dogs Lie” (Giovanni Demands Equal Time)

Gio sleeping

I don’t know how Giovanni manages to sleep through the sounds of me banging the pots and pans while I’m cooking dinner or the sound of my clicking camera.  One bell, chime, knock, or the question, “What’s that?” , sends him flying into a fit of barking and runnng for the door.

Gio sun

Dogs truly live in the moment.

One day, as I watched Giovanni slumbering in the sun spot, I noticed how completely relaxed he looked.  It was a moment.

I am in awe of the trust he puts in me.

His world was shattered the first few days the “girls” arrived.  No matter how bad his day goes, he still rolls with the punches.  Maybe dog is more than “man’s best friend”.  Maybe dog is one of our greatest teachers.
